A simple yet flavorful dish made with day-old rice, ham, eggs, and vegetables.
Ingredients:
- 2 cups cooked jasmine rice (preferably day-old)
- 1 cup diced ham
- 2 eggs, beaten
- ½ cup frozen peas and carrots
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- ½ tsp black pepper
Instructions:
- Heat vegetable oil in a large pan over medium-high heat. Add diced ham and sauté for 2 minutes.
- Push ham to one side and pour in the beaten eggs. Scramble until fully cooked.
- Add garlic, peas, and carrots. Stir-fry for 2 minutes.
- Add day-old rice, breaking up any clumps. Pour in soy sauce, oyster sauce, and sesame oil. Stir well.
- Stir in green onions and black pepper. Cook for another minute. Serve hot.

- ½ cup pineapple chunks (fresh or canned, drained)
- ½ cup bell peppers (red or yellow), diced
- 1 small onion, chopped
- 2 eggs, beaten
- 2 tbsp soy sauce
- 1 tbsp honey (optional)
- 1 tbsp vegetable oil
- ½ tsp chili flakes (optional)
Instructions:
- Heat oil in a pan and sauté onions and bell peppers until soft.
- Add ham and stir-fry for 2 minutes. Add pineapple and cook for another minute.
- Push ingredients to one side, scramble eggs on the other side until cooked.
- Add rice and mix well. Pour in soy sauce and honey. Stir-fry for 2 minutes.
- Sprinkle chili flakes (if using), mix, and serve hot.
Garlic Butter Ham Fried Rice
A richer version with buttery garlic flavors.
Ingredients:
- 2 cups cooked rice
- 1 cup diced ham
- 3 cloves garlic, minced
- 2 tbsp unsalted butter
- 2 eggs, beaten
- 2 tbsp soy sauce
- ½ tsp white pepper
- 1 tbsp chopped parsley or green onions
Instructions:
- Melt butter in a pan, add garlic, and cook until fragrant.
- Add ham and sauté for 2 minutes. Push to one side and scramble eggs on the other side.
- Add rice, soy sauce, and white pepper. Stir-fry well.
- Mix in chopped parsley or green onions. Serve hot.
